Chicken of the sea smoked salmon (12-pack arrived today from Amazon - I can't get it in NC, can't wait for publix to finally get here soon, see if they stock it) I love it! - not only does it taste great, but it doesn't need refrigerating and it lasts for three years (though these might not last two weeks)
Followed it up with a Cadbury's Fruit & Nut bar and a San Pelligrino aranciata, living high on the hog!

Homemade pho -- my first attempt. It is so damned good.
I went to the local Vietnamese grocery store and put what I thought I needed in a basket, but I was having trouble because the English on the packaging was a mere afterthought. I asked someone who worked there what they recommended as the best ingredients. She turned out to be quite well versed and enthusiastic, though her English was only slightly better than my Vietnamese. I ended up with the bulk spices and stock mix for a 10 gallon recipe (because that is the smallest batch she makes), but a more sane amount of the perishable ingredients. She also gave a warning about how eating the wrong star anise can kill you, so hopefully she isn't a serial killer since I used what she gave me.
I divided things up for making 5 two gallon batches and made little steeping bags for the non-soluble spices then made a 2 gallon recipe. My husband and I had two enormous bowls of the stuff over rice noodles with thin slices of beef flank cut across the grain and dropped raw into the hot broth immediately before eating. I'm stuffed, I have six quarts of broth left over and the mega bag of rice noodles I bought is barely dented. I always said I could eat pho every day if it was there...time to put my mouth where my mouth is.
